Both Indian and Iranian writers described the production of rock candy as early as the first half of the 9th century.
The first rock candy was colored red (the dye was made from cochineal, derived from insects) or blue (derived from indigo, a plant extract).
That same rock candy was flavored with ambergris (from sperm whales) as well as from the essence of various flowers.
In the late 1800’s, before the invention of patented cough medicines, rock sugar syrup was used to relieve sore throats.
The first rock candy confection sold in the United States was white rock candy crystals on a string.
Rock candy was first grown on a stick, colored, flavored and sold as a child’s confection in the early 1970’s.
Today, the most popular flavors are: Cotton Candy, Blue Raspberry, Cherry, Watermelon, Strawberry and Grape.
